Ry is a great base for hiking on the trail from Aarhus to Silkeborg. There are numerous trails on both sides of the lake and they are incredibly picturesque. I recommend going in the shoulder season when the weather is cooler and there are less people. Also try and time a trip with the secondhand market that is in the carpark of the supermarket. The hotel was a contrast in that it was inexpensive for Denmark, and fairly basic though perfectly comfortable, and there was a lovely view over the hills at the back, with a private patio. However the breakfast, included in the price, was incredible. This is a review of the hotel, but we ate at the restaurant in the evening we were there too, and that is an absolute gem.
